Summertime

That's Japanese for Good Day.? I hope you're having a great day and are digging in to your Better Body Brighter Mind Lifestyle.? The reason for the Japanese greeting is the "tip of the day."? I try to keep an eye out for ideas from around the world that make it easy to succeed at losing weight and getting healthier.? they all have one thing in common.? They can become part of a lifestyle that you do all the time, not just a "flash-in-the-pan."

Anyway, a two-year French study of over 5,000 men and women showed that eating soup five to six times a week was a habit that showed up in people who tended to be lean (BMI less than 23).? The others had a higher likelihood of being overweight with a BMI in the 27 range.
?
Vegetable broth soups with lots of flavor seem to be satisfying and healthful.? Cold soups work in the summertime just as well.

INGREDIENTS:
- 3/8 cucumber, peeled and diced
- 3/8 green bell pepper, diced
- 2 green onions, chopped
- 3/4 clove garlic, minced
- 1-1/4 tomatoes, diced
- 3/4 stalk celery, diced
- 1 cup cooked navy beans, rinsed and drained
- 2-1/2 teaspoons olive oil
- 2 tablespoons and 1-1/4 teaspoons red wine vinegar
- 3/8 (46 fluid ounce) can tomato juice
- 1/2 teaspoon ground cumin
- 1-1/4 teaspoons minced fresh parsley
- 1-1/4 teaspoons minced fresh basil
- 1/2 teaspoon minced fresh oregano
- 1/8 teaspoon salt
DIRECTIONS:
- In a 4-quart serving bowl or soup tureen, combine cucumber, bell pepper, green onion, garlic, tomatoes, celery, navy beans, olive oil, vinegar and tomato juice Season with cumin, parsley, basil, oregano and salt. Adjust spices and seasonings to taste. Chill in refrigerator at least 4 hours before serving cold.
